Welcome to Put on a Spread, a recipe series that takes you inside the kitchens – and dining rooms – of some of our favourite home cooks. For this instalment, Steph from The Lucky Dragon Supper Club shares her recipe for a Dutch baby pancake with berries.
Pancakes are one of those universally loved sweets. They're easy to make and can welcome a host of different accoutrements. There are a few renditions from around the world, all of which are tasty, but unlike classic pancakes, Dutch babies are baked in the oven, rather than fried.
Also known as a German pancake, these large, fluffy, pancakes make for an indulgent breakfast or brunch treat. Lucky Dragon Supper Club's preferred fillings with her recipe are ricotta (or ice cream if you want to go all out), strawberries, raspberries, and a generous pour of maple syrup.
Whether you're putting on a spread for Mother's Day or you want to luxuriate on a Sunday morning, this sweet treat will delight all, one fluffy mouthful at a time. And don't be alarmed when it deflates once removed from the oven; that's all part of the act!
Ingredients
- 4 eggs
- 130ml milk
- 100g flour
- 25g brown sugar
- ¼ tsp salt
- ¼ tsp cinnamon (optional)
- 60g unsalted butter
Fillings
- Ice cream or ricotta
- Strawberries
- Raspberries
- Icing sugar
- Maple syrup
Method
- Preheat the oven to 200°C.
- Whisk together eggs, flour, milk, sugar, salt and cinnamon in a bowl until smooth. You can also blitz these ingredients in a blender!
- Melt butter in a 8-10 inch cast iron skillet on medium heat.
- Once melted, pour in the batter and place straight into the oven for 20 minutes. If you do not have a cast iron skillet, you can also use a 8-inch cake tin and melt the butter in the oven.
- Serve with your favourite fillings and don’t forget to dust with icing sugar
