This Simple Baked Brie With Chilli, Thyme, and Honey Is the Ultimate Crowd Pleaser

It's the perfect dinner party snack, sandwich filler, or midweek treat.

Welcome to Put on a Spread, a recipe series that takes you inside the kitchens – and dining rooms – of some of our favourite home cooks. For this instalment, Victoria Minell shares her recipe for baked brie with chilli, thyme, and honey.

Ingredients

  • 250g brie cheese
  • 1 clove of garlic
  • 1 tbsp chilli flakes
  • 2 sprigs of fresh thyme
  • 1 tsp honey
  • Pinch of salt
  • Pinch of pepper

Method

  • Preheat the oven to 180 C.
  • Remove the brie from the wrapping. Place on baking paper and then in a skillet or baking tray. Do not remove the rind.
  • Score the top of the brie with a knife in a criss-cross pattern.
  • Top the brie with garlic, chilli flakes, salt, pepper, thyme and honey.
  • Bake in the oven for 10-15 minutes until the brie is gooey and soft.
  • Serve immediately with crackers, bread or fruit slices. Enjoy!
